Ingredients

- 1 whole rotisserie chicken, shredded
- 2 cups fresh mushrooms, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Shred the rotisserie chicken and set aside.
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until softened.
- Add sliced mushrooms and cook until they release their juices.
- Pour in chicken broth and bring to a simmer.
- Add the shredded chicken and heavy cream, stir well.
- Season with salt and pepper, and simmer for 15-20 minutes.
- Serve hot.
Notes
For a healthier version, use low-sodium broth and skim milk instead of heavy cream.
