Rotisserie Chicken Mushroom Soup

Ingredients

  • 1 whole rotisserie chicken, shredded
  • 2 cups fresh mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Shred the rotisserie chicken and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add diced onion and minced garlic, sauté until softened.
  4. Add sliced mushrooms and cook until they release their juices.
  5. Pour in chicken broth and bring to a simmer.
  6. Add the shredded chicken and heavy cream, stir well.
  7. Season with salt and pepper, and simmer for 15-20 minutes.
  8. Serve hot.

Notes

For a healthier version, use low-sodium broth and skim milk instead of heavy cream.
