- For the loaf:
- 500g bread flour
- 350ml water
- 100g active sourdough starter
- 10g salt
- For the topping:
- 200g Brie cheese, sliced
- 100g fresh cranberries
- 2 tbsp honey
- 1 tsp fresh thyme leaves
Instructions
- In a large bowl, mix flour and water until shaggy. Let rest for 30 minutes.
- Add sourdough starter and salt, knead until smooth. Proof for 4-6 hours.
- Shape into a loaf and rise for another 2 hours.
- Preheat oven to 450°F. Score the loaf and bake for 30 minutes.
- Remove loaf, slice and top with Brie and cranberries.
- Drizzle with honey, sprinkle thyme, and bake for another 5-10 minutes until cheese is melted and cranberries burst.
Notes
Use a cast-iron Dutch oven for baking to create a crisp crust. Ensure sourdough starter is bubbly and active.
