Rustic Sourdough Loaf with Brie and Cranberry

A hearty, homemade sourdough loaf baked with tangy Brie cheese and sweet-tart cranberries, perfect for a rustic holiday meal or appetizer.

Ingredients

  • For the loaf:
  • 500g bread flour
  • 350ml water
  • 100g active sourdough starter
  • 10g salt
  • For the topping:
  • 200g Brie cheese, sliced
  • 100g fresh cranberries
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves

Instructions

  1. In a large bowl, mix flour and water until shaggy. Let rest for 30 minutes.
  2. Add sourdough starter and salt, knead until smooth. Proof for 4-6 hours.
  3. Shape into a loaf and rise for another 2 hours.
  4. Preheat oven to 450°F. Score the loaf and bake for 30 minutes.
  5. Remove loaf, slice and top with Brie and cranberries.
  6. Drizzle with honey, sprinkle thyme, and bake for another 5-10 minutes until cheese is melted and cranberries burst.

Notes

Use a cast-iron Dutch oven for baking to create a crisp crust. Ensure sourdough starter is bubbly and active.
