Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 pound smoked beef, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Rinse the soaked white beans and set aside.
  2. In a large pot, heat olive oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
  3. Add the diced smoked beef and cook for 5 minutes.
  4. Stir in the white beans, beef broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
  6. Adjust seasoning and serve hot.

Notes

For a vegetarian version, substitute smoked beef with smoked tofu.
