- 2 cups dried white beans, soaked overnight
- 1 pound smoked beef, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Rinse the soaked white beans and set aside.
- In a large pot, heat olive oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
- Add the diced smoked beef and cook for 5 minutes.
- Stir in the white beans, beef broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Adjust seasoning and serve hot.
Notes
For a vegetarian version, substitute smoked beef with smoked tofu.
