For the Crust:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into small pieces.
- Add onion, garlic, carrots, and celery. Cook until vegetables soften, about 5 minutes.
- Stir in chicken broth, white beans, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Add spinach and cook until wilted, about 2 minutes.
- Adjust seasoning if needed and serve hot.
