Sausage White Bean Soup

A hearty and flavorful soup with savory sausage and creamy white beans.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into small pieces.
  2. Add onion, garlic, carrots, and celery. Cook until vegetables soften, about 5 minutes.
  3. Stir in chicken broth, white beans, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Add spinach and cook until wilted, about 2 minutes.
  6. Adjust seasoning if needed and serve hot.

Notes

You can customize the seasonings to taste.
