- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup dried cranberries
- 1/4 cup chopped pistachios
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs with melted butter and press into mini muffin cups.
- Beat cream cheese and sugar until smooth.
- Add egg and vanilla, mix well.
- Fold in cranberries and pistachios.
- Pour batter over crusts and bake for 20 minutes.
