- 2 cups almond flour
- 1/2 cup whey protein powder (unflavored or vanilla)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheese (cheddar or parmesan)
- 1/4 cup chopped spinach
- 2 eggs
- 1/4 cup unsweetened almond milk
- 2 tbsp melted butter or ghee
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, protein powder, baking powder, salt, and pepper.
- Stir in shredded cheese and chopped spinach.
- In a separate bowl, beat eggs, almond milk, and melted butter until smooth.
- Combine wet ingredients with dry ingredients until a dough forms.
- Scoop dough onto the prepared baking sheet and shape into biscuits.
- Bake for 15-18 minutes until golden brown.
- Cool completely before freezing.
Notes
These biscuits can be frozen for up to 3 months. Thaw and reheat in the microwave or oven. Feel free to add other veggies like diced bell peppers.
