Ingredients

  • 2 acorn squashes, halved and seeded
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 100g coconut feta cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and remove the seeds.
  3. Brush the cut sides with olive oil and sprinkle with chili powder, salt, and black pepper.
  4. Place the squash halves cut-side down on a baking sheet.
  5. Roast in the preheated oven for 30-40 minutes, or until tender.
  6. Remove from the oven and top with crumbled coconut feta cheese.
  7. Serve immediately.

Notes
