- For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- For the Filling:
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 egg
- 1/4 cup chopped pistachios
- 1/2 cup dried cranberries
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Topping:
- 1/4 cup cranberry sauce
- 2 tablespoons chopped pistachios
Instructions
- Preheat oven to 350°F.
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of 8-10 mini cheesecake cups.
- In a separate bowl, beat cream cheese, sour cream, mayonnaise, and egg until smooth.
- Stir in chopped pistachios, dried cranberries, salt, and pepper.
- Pour filling over crusts and bake for 15-20 minutes until set.
- Cool and top with cranberry sauce and additional chopped pistachios before serving.
Notes
These can be made ahead and refrigerated. Adjust seasoning to taste for more savoriness.
