  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • For the Filling:
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 egg
  • 1/4 cup chopped pistachios
  • 1/2 cup dried cranberries
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Topping:
  • 1/4 cup cranberry sauce
  • 2 tablespoons chopped pistachios

Instructions

  1. Preheat oven to 350°F.
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of 8-10 mini cheesecake cups.
  3. In a separate bowl, beat cream cheese, sour cream, mayonnaise, and egg until smooth.
  4. Stir in chopped pistachios, dried cranberries, salt, and pepper.
  5. Pour filling over crusts and bake for 15-20 minutes until set.
  6. Cool and top with cranberry sauce and additional chopped pistachios before serving.

Notes

These can be made ahead and refrigerated. Adjust seasoning to taste for more savoriness.
