- 3to4pounds beef chuck roast
- 3yellow onions, sliced
- 3shallots, halved
- 4garlic cloves, chopped
- 2 cupschopped carrots
- 2 tablespoonsbutter
- 2 tablespoonswhite miso paste
- 2 tablespoonstomato paste
- ¼ cupsoy sauce or tamari
- 2 cupsbeef or vegetable broth
- 2 cupswater
- 1 tablespoonChinese five-spice powder
- 1to2teaspoons red chili flakes
- 2dried bay leaves
- 6sprigs fresh thyme
- Freshly ground black pepper
- Toasted sesame seeds for garnish
Instructions
- Preheat the Oven
- Set the oven to 325°F so it reaches temperature while you prepare the ingredients.
- Season the Meat
- Place the beef chuck roast into a large Dutch oven. Season it generously with black pepper and set aside while you prepare the flavor base.
- Layer the Aromatics
- Scatter the sliced onions, shallots, garlic, and chopped carrots evenly around the roast. Add the butter on top to help everything brown and deepen in flavor as it cooks.
- Mix the Braising Liquid
- In a bowl, combine the miso paste, tomato paste, soy sauce, broth, and water. Stir until smooth and blended. Add the five-spice powder and chili flakes, mixing them well into the liquid.
- Combine Everything
- Pour the braising liquid over the roast and vegetables. Add the bay leaves and thyme sprigs on top. Make sure the liquid almost reaches the top of the meat without completely covering it.
- Slow-Cook the Roast
- Cover the Dutch oven with a tight-fitting lid and transfer it to the oven. Let it cook slowly for about four hours, or until the beef becomes tender enough to pull apart easily with a fork.
- Caramelize the Top
- When the meat is tender, raise the oven temperature to 425°F. Remove the lid and continue roasting uncovered for twenty minutes. This will give the beef a rich, caramelized finish. If the broth reduces too much, add a small splash of warm water or broth.
- Serve and Garnish
- Take the roast out of the oven and let it rest for a few minutes. Slice or shred the meat and spoon the flavorful broth and vegetables over the top. Sprinkle with toasted sesame seeds before serving.
