- 3lbs beef short ribs (bone-in or boneless)
- 3 tablespoonsall-purpose flour
- 2 tablespoonsolive oil
- ¾ teaspoonsalt
- ½ teaspoonblack pepper
- For the Sauce
- 1¾ cupsAsian-style barbecue sauce (homemade or store-bought)
- 1½ cupsbeef broth (or vegetable broth)
- 1 tablespoonsoy sauce
- 1 tablespoonbrown sugar
- 1 teaspoonminced garlic
- ½ teaspooncrushed red pepper flakes (optional, for spice)
- For the Vegetables & Noodles
- 1½ cupsbaby corn, sliced into bite-size rounds
- 2 cupsbroccoli florets (fresh or thawed frozen)
- 10 ouncesudon noodles, cooked and drained
- Optional Garnish
- 2green onions, sliced thin
- 1 teaspoonsesame seeds
Instructions
- 1. Prepare the Ribs
- Pat the ribs dry with a paper towel. Sprinkle with salt and black pepper, then lightly coat with flour.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the ribs on all sides for 3–4 minutes per side until deeply browned.
- Transfer the seared ribs to a 6-quart slow cooker.
- 2. Make the Sauce
- In the same skillet, whisk together the barbecue sauce, beef broth, soy sauce, brown sugar, minced garlic, and red pepper flakes.
- Scrape up any browned bits from the bottom — they add great flavor.
- Pour this sauce mixture over the ribs in the slow cooker, coating them well.
- 3. Slow Cook the Ribs
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the ribs are fork-tender and the meat easily separates from the bone.
- Once done, remove the ribs carefully and place them on a plate.
- 4. Add the Vegetables and Noodles
- Add the baby corn and broccoli to the slow cooker with the remaining sauce.
- Turn the heat to HIGH, cover, and cook for 10–15 minutes, just until the vegetables are tender.
- Add the cooked udon noodles and toss gently to coat everything in the sauce.
- 5. Finish and Serve
- Return the ribs to the slow cooker, spooning sauce over the top to glaze them.
- Serve the ribs hot with the saucy noodles and vegetables.
- Garnish with sliced green onions and a sprinkle of sesame seeds if desired.
