Slow Cooker Goulash Recipe

A hearty and comforting slow cooker goulash with tender beef, vegetables, and rich tomato sauce.

For the Crust:

  • 1.5 lbs beef stew meat, cubed
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 cups beef broth
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups elbow macaroni, uncooked

Instructions

1. Prepare the Crust:

  1. In a slow cooker, combine beef, onion, garlic, bell pepper, beef broth, tomato sauce, diced tomatoes, paprika, caraway seeds, salt, and black pepper.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours, until beef is tender.
  3. Stir in uncooked macaroni, cover, and cook on high for an additional 20-30 minutes until pasta is tender.
  4. Serve warm, garnished with fresh parsley if desired.
