- 1 pound fresh green beans, trimmed
- 4 medium potatoes, peeled and cubed
- 1/2 pound smoked ham or bacon, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Step 1: Wash and trim the green beans, then add them to the slow cooker.
- Step 2: Peel and cube the potatoes, and add them to the slow cooker along with the chopped smoked meat.
- Step 3: Dice the onion and mince the garlic, then add them to the mixture.
- Step 4: Pour in the chicken broth and season with salt and pepper.
- Step 5: Cover and cook on low for 6-8 hours, or until vegetables are tender.
- Step 6: Stir occasionally and serve hot.
Notes
For a vegetarian version, substitute smoked meat with smoked tofu. Ensure green beans are fresh for best texture.
