Slow Cooker Lemon Herb Chicken Rice

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add rice, chicken broth, lemon juice, lemon zest, garlic, oregano, and thyme.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken and stir in parsley before serving.

Notes

Adjust seasonings to taste. Can be made with brown rice for a healthier option.
