- 1.5 lbs boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Place chicken breasts in the slow cooker.
- Add rice, chicken broth, lemon juice, lemon zest, garlic, oregano, and thyme.
- Season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken and stir in parsley before serving.
Notes
Adjust seasonings to taste. Can be made with brown rice for a healthier option.
