- 4 medium potatoes, diced
- 2 cups fresh green beans, trimmed

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced smoked sausage and cook until browned, about 5 minutes.
- Add diced potatoes, onion, and garlic; stir and cook for 10 minutes.
- Add green beans, salt, and pepper; cover and cook for another 15 minutes until vegetables are tender.
- Stir occasionally and serve hot.
Notes
For a healthier version, use turkey sausage. This dish pairs well with crusty bread.
