Soft Chewy Gingerbread Men Cookies

These soft and chewy gingerbread cookies are spiced with ginger, cinnamon, and cloves, perfect for holiday baking.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg, then stir in the molasses and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, wrap in plastic wrap, and chill for at least 2 hours.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a floured surface, roll out the dough to 1/4-inch thickness and cut out gingerbread men shapes.
  8. Place cookies on prepared baking sheets and bake for 8-10 minutes, until edges are firm.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, avoid overbaking. Decorate with royal icing once cooled.
