- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg, then stir in the molasses and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half, wrap in plastic wrap, and chill for at least 2 hours.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a floured surface, roll out the dough to 1/4-inch thickness and cut out gingerbread men shapes.
- Place cookies on prepared baking sheets and bake for 8-10 minutes, until edges are firm.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For softer cookies, avoid overbaking. Decorate with royal icing once cooled.
