Soft Chewy Gingerbread Men Cookies

These soft and chewy gingerbread men cookies are a holiday favorite, spiced with ginger and molasses for a warm, festive flavor.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup molasses
  • 1 teaspoon baking soda

Instructions

  1. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, salt, and baking soda.
  2. In a large bowl, beat butter and sugar until creamy.
  3. Add egg, water, and molasses; mix well.
  4. Gradually add dry ingredients to wet ingredients and stir until combined.
  5. Divide dough in half, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a floured surface, roll dough to 1/4-inch thickness and cut out gingerbread men shapes.
  8. Place cookies on prepared sheets and bake for 8-10 minutes or until edges are firm.
  9. Cool on wire racks before decorating.

Notes

For extra softness, do not overbake. Decorate with icing and candies for a festive touch.
