Southern Vanilla Butter Pecan Cake

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1/2 cup chopped pecans
  • 4 large eggs
  • 1/2 cup whole milk
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the butter mixture, alternating with milk.
  6. Fold in chopped pecans, then pour batter into the prepared pan.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let cake cool in pan for 10 minutes before transferring to a wire rack.
