Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • For the bang bang sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • Wooden skewers, soaked in water if grilling

Instructions

  1. In a bowl, combine chicken cubes with olive oil, soy sauce, garlic powder, ground ginger, red pepper flakes, salt, and black pepper. Marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat or air fryer to 400°F (200°C).
  3. Thread the marinated chicken onto skewers.
  4. If grilling: Grill skewers for 5-7 minutes per side until chicken is cooked through and slightly charred.
  5. If air frying: Place skewers in the air fryer basket and cook for 10-12 minutes, shaking halfway, until golden and cooked through.
  6. While chicken cooks, prepare the bang bang sauce by whisking together mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl.
  7. Remove skewers from heat and brush generously with bang bang sauce.
  8. Serve immediately, garnished with sesame seeds or chopped green onions if desired.

Notes

For extra spice, increase the sriracha. Ensure skewers are not overcrowded for even cooking.
