Spicy Jalapeño Cornbread Drizzled with Sweet Lime Honey

For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1 cup buttermilk
  • 1/3 cup melted butter
  • 1 large egg
  • 2 jalapeños, finely chopped (seeds removed for less heat)
  • 1/4 cup honey
  • 1 tbsp lime juice
  • 1 tsp lime zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease an 8-inch square baking pan.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, mix buttermilk, melted butter, and egg. Pour into dry ingredients and stir until just combined.
  4. Fold in chopped jalapeños. Pour batter into the prepared pan.
  5. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  6. While cornbread bakes, mix honey, lime juice, and lime zest in a small bowl.
  7. Drizzle the lime honey over warm cornbread before serving.
