For the Crust:
- 4 large flour tortillas
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1/2 cup powdered sugar (for dusting)
- Oil for frying
Instructions
1. Prepare the Crust:
- In a bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth.
- Fold in diced strawberries and graham cracker crumbs.
- Spoon the mixture onto the center of each tortilla, then fold into burrito shapes.
- Heat oil in a pan over medium heat and fry each chimichanga until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels.
- Dust with powdered sugar before serving.
