Strawberry Cheesecake Chimichangas

A delicious dessert with crispy tortillas filled with creamy cheesecake and fresh strawberries.

For the Crust:

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1/2 cup powdered sugar (for dusting)
  • Oil for frying

Instructions

1. Prepare the Crust:

  1. In a bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth.
  2. Fold in diced strawberries and graham cracker crumbs.
  3. Spoon the mixture onto the center of each tortilla, then fold into burrito shapes.
  4. Heat oil in a pan over medium heat and fry each chimichanga until golden brown, about 2-3 minutes per side.
  5. Remove from oil and drain on paper towels.
  6. Dust with powdered sugar before serving.
