For the Crust:
- 8 slices thick-cut brioche or challah bread
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup fresh strawberries, diced
- 2 large eggs
- 1/2 cup milk
- 1 tsp ground cinnamon
- 2 tbsp butter
- Maple syrup for serving
Instructions
1. Prepare the Crust:
- In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Fold in diced strawberries.
- Spread the cream cheese mixture on 4 slices of bread, then top with remaining slices to make sandwiches.
- Whisk together eggs, milk, and cinnamon in a shallow dish.
- Melt butter in a large skillet over medium heat.
- Dip each sandwich in the egg mixture, coating both sides.
- Cook in skillet for 3-4 minutes per side until golden brown.
- Serve warm with maple syrup and additional strawberries if desired.
