Strawberry Crunch Cheesecake Bites

Delicious bite-sized cheesecake treats with a strawberry crunch topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup vanilla wafer crumbs

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tsp into each liner to form crust.
  3. Beat cream cheese, sugar, and vanilla until smooth. Spoon filling over crusts.
  4. Bake for 15 minutes. Cool completely, then refrigerate for 2 hours.
  5. Top each bite with strawberry jam, then sprinkle with crushed freeze-dried strawberries and vanilla wafer crumbs.

Notes

You can customize the seasonings to taste.
