Strawberry Earthquake Cake

A delicious strawberry-flavored earthquake cake with a gooey center and crumbly top.

Ingredients

  • 1 box white cake mix
  • 1 cup fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 1/2 cup butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • Optional: Additional strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Sprinkle the chopped pecans evenly on the bottom of the prepared dish.
  3. In a large bowl, mix the cake mix according to package instructions and pour it over the pecans.
  4. In another bowl, beat the cream cheese until smooth, then add melted butter, powdered sugar, and vanilla extract; mix well.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter and swirl gently with a knife.
  6. Bake for 40-45 minutes or until the edges are golden and the center is set but still slightly jiggly.
  7. Allow the cake to cool completely before slicing.
  8. Garnish with fresh strawberries if desired and serve.

Notes

This cake is best served chilled and can be stored in the refrigerator for up to 3 days.
