Summer Berry and Peach Cheesecake

A refreshing no-bake cheesecake with a graham cracker crust, topped with fresh summer berries and peaches.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 large peach, sliced
  • 2 tablespoons honey (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of a 9-inch springform pan.
  2. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the whipped cream.
  3. Spread the cream cheese mixture over the crust and smooth the top. Refrigerate for at least 4 hours or overnight.
  4. Before serving, arrange the fresh berries and peach slices on top. Drizzle with honey if desired.
  5. Slice and serve chilled.

Notes

You can customize the seasonings to taste.
