Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato slices with olive oil, salt, and pepper on a baking sheet.
- Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- Remove from the oven and let cool slightly.
- Assemble the stacks by layering the roasted sweet potato slices with pieces of burrata cheese.
- Garnish with fresh herbs and drizzle with balsamic glaze if desired.
- Serve immediately.
