  • 1 ball of burrata cheese, torn into pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs like thyme or rosemary for garnish
  • Optional: Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato slices with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. Remove from the oven and let cool slightly.
  5. Assemble the stacks by layering the roasted sweet potato slices with pieces of burrata cheese.
  6. Garnish with fresh herbs and drizzle with balsamic glaze if desired.
