For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 2 cups mashed sweet potatoes
- 16 oz cream cheese, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, granulated sugar, and melted butter. Press into a 9-inch pie dish.
- Bake crust for 8 minutes, then let cool.
- Beat cream cheese and brown sugar until smooth. Add eggs one at a time, then mix in sweet potatoes, vanilla, cinnamon, nutmeg, and salt.
- Pour filling into crust and bake for 40-45 minutes until set.
- Cool completely before refrigerating for at least 4 hours.
