Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup burrata cheese, drained and torn
  • 1/2 cup pistachios, shelled and finely chopped
  • 2 tablespoons olive oil
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Boil the sweet potatoes in salted water until tender, about 15 minutes; drain and mash.
  2. Mix the mashed sweet potatoes with breadcrumbs, egg, salt, and pepper; form into small croquettes.
  3. Heat olive oil in a skillet over medium heat; fry croquettes until golden brown on all sides.
  4. For the dip, blend burrata cheese with a splash of olive oil until smooth.
  5. Top the croquettes with chopped pistachios and serve with the burrata dip on the side.

Notes

For a vegan version, substitute burrata with a plant-based alternative and use a flax egg.
