Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces Brie cheese, thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange the rounds on the baking sheet and bake for 20-25 minutes, or until tender and lightly browned.
  4. Remove from the oven and top each round with a slice of Brie cheese, a few cranberries, and chopped pecans.
  5. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let cool slightly before serving.
