Ingredients

  • 2 large sweet potatoes, washed and sliced into 1/2-inch rounds
  • 1 cup fresh or dried cranberries
  • 8 ounces cream cheese, softened
  • 1/2 cup chopped pecans
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato rounds with olive oil, salt, and pepper.
  3. Arrange the rounds on a baking sheet and bake for 20-25 minutes, or until tender.
  4. In a bowl, mix the cream cheese until smooth.
  5. Remove the sweet potatoes from the oven and top each round with a dollop of cream cheese, cranberries, and pecans.
  6. Serve immediately.

Notes

For a sweeter version, add a drizzle of honey before serving.
