- 2 large sweet potatoes, washed and sliced into 1/2-inch rounds
- 1 cup fresh or dried cranberries
- 8 ounces cream cheese, softened
- 1/2 cup chopped pecans
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds on a baking sheet and bake for 20-25 minutes, or until tender.
- In a bowl, mix the cream cheese until smooth.
- Remove the sweet potatoes from the oven and top each round with a dollop of cream cheese, cranberries, and pecans.
- Serve immediately.
Notes
For a sweeter version, add a drizzle of honey before serving.
