Sweet & Spicy Summer Peach Salsa

  • 1/2 cupquartered multicolored cherry tomatoes
  • 1/4 cuppacked chopped fresh cilantro leaves
  • 1/2small serrano chile, cut into thin rings
  • 1 tsp. grated lime zest plus 2 Tbsp. fresh juice (from1lime)
  • 1 tsp. kosher salt
  • 1/4 tsp. chili powder

Instructions

  1. Prepare the Ingredients:Begin by pitting and dicing the peaches, chopping the red onion, and quartering the cherry tomatoes. Make sure your cilantro is finely chopped and the serrano chile is cut into thin rings.
  2. Combine the Ingredients:In a medium bowl, combine the diced peaches, chopped red onion, quartered tomatoes, chopped cilantro, and serrano chile.
  3. Add the Zest and Juice:Grate the lime zest directly into the bowl, then squeeze in the fresh lime juice. The zest adds an extra layer of citrusy flavor that pairs perfectly with the peaches.
  4. Season the Salsa:Sprinkle in the kosher salt and chili powder. These seasonings will enhance the natural flavors of the ingredients, giving the salsa a well-rounded taste.
  5. Mix and Let Stand:Stir everything together until well combined. Let the salsa stand for about 5 minutes at room temperature, stirring occasionally. This resting time allows the flavors to meld beautifully.

Notes

Choosing Peaches:For the best flavor, use ripe but firm peaches. Overripe peaches may become too mushy, while under-ripe ones can be too tart. Handling Serrano Chile:Serrano chiles are spicier than jalapeños, so handle them with care. Consider wearing gloves when slicing, and avoid touching your face to prevent irritation. Flavor Adjustments:If you like your salsa a bit sweeter, add a teaspoon of honey. For more heat, add extra serrano or a pinch of cayenne pepper.
