- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a bowl, mix graham cracker crumbs and melted butter until combined; press into the bottom of each liner to form crusts.
- In a separate bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in lime juice, lime zest, and sour cream until fully incorporated.
- Pour the mixture over the crusts and bake for 20-25 minutes, or until set.
- Cool in the tin for 10 minutes, then refrigerate for at least 2 hours before serving.
Notes
For a stronger lime flavor, increase the zest to 2 tablespoons. Store leftovers in an airtight container in the fridge for up to 3 days.
