  • For the vegetable stuffing: 1 cup chopped spinach, 1/2 cup diced mushrooms, 1/4 cup feta cheese, 1 tablespoon olive oil
  • For the grain stuffing: 1 cup cooked quinoa, 1/4 cup chopped nuts, 2 tablespoons dried cranberries, Salt and pepper to taste

Instructions

  1. 1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. 2. Prepare the acorn squash: Slice the squashes into 1-inch rings, remove seeds, and arrange on the baking sheet.
  3. 3. Make the stuffings: In separate bowls, mix the ingredients for each stuffing type.
  4. 4. Stuff the rings: Fill each squash ring with one of the stuffing mixtures, pressing gently.
  5. 5. Bake for 35-40 minutes, or until the squash is tender and the stuffing is golden.
  6. 6. Let cool for 5 minutes before serving.
