For the Crust:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 egg
- 1 tsp vanilla extract
- 1 cup diced fresh pineapple
- 1/2 cup shredded coconut
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, egg, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
- Fold in diced pineapple and shredded coconut.
- Heat oil in a deep skillet over medium heat.
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove fritters and drain on paper towels. Serve warm.
