Tropical Bliss Pineapple Fritters

Sweet and crispy pineapple fritters with a tropical twist, perfect for dessert or a snack.

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup diced fresh pineapple
  • 1/2 cup shredded coconut
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, egg, and vanilla extract. Gradually add to the dry ingredients, stirring until smooth.
  3. Fold in diced pineapple and shredded coconut.
  4. Heat oil in a deep skillet over medium heat. Drop spoonfuls of batter into the hot oil.
  5. Fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
