Tropical Bliss Pineapple Fritters

For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups fresh pineapple, diced
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, egg, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
  4. Fold in the diced pineapple until evenly distributed.
  5. Heat oil in a deep skillet over medium heat to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
  7. Remove fritters with a slotted spoon and drain on paper towels.
  8. Dust with powdered sugar before serving.
