- ½lb. mushrooms, finely chopped (about3 cups)
- 1 cuponion, finely chopped (about½large onion)
- ½ cupcelery, finely chopped
- 1lb. ground turkey breast
- ½ cupcoarsely ground cornmeal or dry cornbread stuffing
- ½ cupdried cranberries
- 1egg, lightly beaten
- 1 teaspoonpoultry seasoning
- ½ teaspoongarlic powder
- 1 teaspoonkosher salt
- ½ teaspoonblack pepper
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or spray it lightly with oil.
- Mix the Ingredients: In a large bowl, combine the finely chopped mushrooms, onion, celery, ground turkey, cornmeal or stuffing, dried cranberries, beaten egg, poultry seasoning, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
- Form the Meatballs: Using a meatball scoop or melon baller, scoop out the mixture to form approximately 24 meatballs, each about 1½ inches in diameter. The mixture should be moist but firm enough to hold its shape. Arrange the meatballs on the prepared baking sheet, leaving about 1 inch of space between them.
- Bake: Bake the meatballs, uncovered, for 18-22 minutes, or until the internal temperature reaches 165°F (74°C). You can use a meat thermometer to check for doneness.
- Serve: Serve the meatballs warm, either on their own with mini skewers or with a side of cranberry sauce for dipping. For extra color, garnish with a sprinkle of chopped parsley.
