Tzatziki Chicken Salad

A refreshing salad featuring grilled chicken mixed with creamy tzatziki sauce, cucumbers, and herbs.

Ingredients

  • 2 cups plain Greek yogurt
  • 1 large cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 pound cooked chicken breast, shredded
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved

Instructions

  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, chopped mint, lemon juice, salt, and pepper to make the tzatziki sauce.
  2. Mix in the shredded chicken until well coated.
  3. Add sliced red onion and halved cherry tomatoes, and toss gently.
  4. Refrigerate for at least 30 minutes to let flavors meld.
  5. Serve chilled on a bed of greens or in a wrap.

Notes

For a lighter version, use low-fat yogurt. Adjust garlic to taste.
