Luscious Vanilla Banana Walnut Cake

A moist and flavorful cake combining ripe bananas, crunchy walnuts, and sweet vanilla.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup buttermilk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a 9-inch cake pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time.
  4. Mix in mashed bananas and vanilla extract. Stir in dry ingredients alternately with buttermilk.
  5. Fold in chopped walnuts. Pour batter into prepared pan.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
