For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup white chocolate chips, melted
- 1 cup fresh blueberries
- 2 tbsp sugar
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and melted white chocolate.
- In a saucepan, cook blueberries, sugar, and lemon juice over medium heat until thickened (about 5 minutes). Cool slightly.
- Pour cheesecake batter over crust. Drop spoonfuls of blueberry compote on top and swirl with a knife.
- Bake for 40-45 minutes until center is almost set. Cool completely before refrigerating for at least 4 hours.
