White Chocolate Blueberry Cheesecake

A creamy white chocolate cheesecake swirled with a homemade blueberry compote for a delightful dessert.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips, melted
  • 1 cup fresh blueberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, press into a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and melted white chocolate.
  3. In a saucepan, cook blueberries, sugar, and lemon juice over medium heat until thickened (about 5 minutes). Cool slightly.
  4. Pour cheesecake batter over crust. Drop spoonfuls of blueberry compote on top and swirl with a knife.
  5. Bake for 40-45 minutes until center is almost set. Cool completely before refrigerating for at least 4 hours.

You can customize the seasonings to taste.
