- 2 tablespoons blood orange juice.
- 1 lime, juiced.
- 1 tablespoon red wine vinegar.
- 1 tablespoon honey.
- 1 teaspoon Dijon mustard.
- 1 small garlic clove, minced.
- 1/3 cup olive oil.
- 3 cups arugula or mixed greens.
- 1 blood orange, sliced.
- 1 Cara Cara orange, sliced.
- 1/2 grapefruit, sliced.
- 1/4 red onion, sliced.
- Fresh mint or parsley.
- 1/2 cup pomegranate seeds.
- 3 tablespoons pistachios.
Instructions
- Whisk citrus juices, vinegar, honey, mustard and garlic. Stream in oil.
- Layer greens, citrus slices, onions and herbs.
- Top with pomegranate and pistachios. Drizzle dressing.
Notes
Best served immediately.
Can add protein like chicken or fish.
