- For the White Chocolate Cookie Base:
- 1½ cups vanilla cookie crumbs
- ¼ cup (55 g) unsalted butter, melted
- 2 oz (55 g) white chocolate, melted
- Pinch of fine sea salt
- For the Blueberry Vanilla Mousse:
- 8 oz (225 g) cream cheese, softened
- ½ cup (120 g) mascarpone cheese
- ¾ cup (180 ml) blueberry purée
- 6 oz (170 g) white chocolate, finely chopped
- ¼ cup (60 ml) whole milk
- 1 cup (240 ml) heavy whipping cream
- 2 tsp powdered gelatin
- 3 tbsp cold water
- 1 tsp vanilla bean paste
- 1 tsp fresh lemon juice
- For the Hidden Vanilla Cream Layer:
- ½ cup (120 g) mascarpone cheese
- ¼ cup (60 ml) heavy whipping cream
- 2 tbsp sweetened condensed milk
- 1 tsp vanilla bean paste
- For the Glossy Blueberry Mirror Glaze:
- ½ cup (120 ml) water
- ½ cup (100 g) granulated sugar
- ⅓ cup (80 g) sweetened condensed milk
- 6 oz (170 g) white chocolate, finely chopped
- 2 tsp powdered gelatin
- 3 tbsp cold water
- Deep blue gel food coloring
- Violet gel food coloring
- Edible pearl luster dust
- For Garnish:
- Fresh blueberries
- White chocolate curls
- Edible silver leaf
- Freeze-dried blueberry powder
- Tiny edible flowers (optional)
Instructions
- 1. Line an 8-inch (20 cm) square pan or silicone bar mold with parchment paper.
- 2. Mix the cookie crumbs, melted butter, melted white chocolate, and sea salt until evenly combined. Press firmly into the pan and refrigerate for 20 minutes.
- 3. Bloom the gelatin in the cold water for 5 minutes.
- 4. Heat the milk until just steaming and stir in the bloomed gelatin until completely dissolved. Pour over the white chocolate and stir until smooth.
- 5. Beat together the cream cheese, mascarpone, blueberry purée, vanilla bean paste, and lemon juice until silky. Stir in the white chocolate mixture.
- 6. Whip the heavy cream to soft peaks and gently fold it into the blueberry mixture to create a light mousse.
- 7. In a separate bowl, whisk together the mascarpone, heavy cream, condensed milk, and vanilla bean paste until smooth. Spread into a thin square on parchment and freeze until firm.
- 8. Spread half of the blueberry mousse over the chilled cookie base. Place the frozen vanilla cream layer on top, then cover with the remaining mousse. Freeze for at least 6 hours or overnight.
- 9. Bloom the remaining gelatin for the mirror glaze. Heat the water, sugar, and condensed milk until the sugar dissolves. Remove from the heat, stir in the gelatin, then pour over the white chocolate and blend until smooth.
- 10. Tint the glaze with deep blue and a touch of violet gel coloring. Mix in the pearl luster dust and cool the glaze to **90°F (32°C)**.
- 11. Remove the frozen dessert from the mold and place it on a wire rack. Pour the mirror glaze evenly over the top and sides until completely coated.
- 12. Let the glaze set for 10–15 minutes, then slice into bars with a warm knife. Garnish with fresh blueberries, white chocolate curls, edible silver leaf, freeze-dried blueberry powder, and edible flowers before serving.
