Rosemary & Garlic Braised Lamb Shanks in Rich Herb-Infused Gravy

  • 1 large bunch fresh rosemary (about 0.75 oz)
  • 8 garlic cloves, smashed
  • 2 cinnamon sticks
  • 5 sprigs fresh thyme
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 1 cup fresh plum tomatoes, chopped
  • 4 cups chicken stock
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 3 bay leaves
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 tablespoon apple cider vinegar
  • 1 large handful fresh mint leaves
  • Additional thyme leaves for gravy
  • Salt and black pepper, to taste
