- For the Chicken & Broccoli Bowl:
- 2 large boneless skinless chicken breasts
- 4 cups broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lime, cut into wedges
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub chicken breasts with olive oil and season generously with the spice mixture.
- Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- Toss broccoli florets with a little olive oil and salt. Grill for 3-4 minutes, turning once, until charred and tender.
- Serve sliced chicken and charred broccoli over rice or greens, and drizzle with velvety garlic lime cream sauce. Garnish with lime wedges.
Notes
The velvety garlic lime cream sauce can be made by blending 1/2 cup sour cream, 2 tablespoons lime juice, 1 clove garlic, salt, and pepper until smooth.
