Chicken Pasta with Bacon and Mushroom Cream Sauce

Ingredients

  • 12 oz fettuccine or penne pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 6 slices bacon, chopped
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the pan.
  3. Season chicken pieces with salt and pepper. Add to the skillet with bacon fat and cook over medium-high heat until golden and cooked through. Remove and set aside.
  4. In the same skillet, add olive oil if needed. Sauté onion and garlic until softened, about 2 minutes.
  5. Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
  6. Reduce heat to low, pour in heavy cream, and stir in Parmesan cheese. Simmer gently until the sauce thickens slightly, 3-5 minutes.
  7. Return bacon and chicken to the pan. Add cooked pasta and toss to coat evenly with the sauce. Adjust seasoning with salt and pepper.
  8. Serve hot, garnished with fresh parsley.
