Hearty Coconut Chicken Curry with Tender Potatoes and Aromatic Indian Spices

  • 1½ lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely diced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon coriander
  • 2 tablespoons tomato paste
  • 1 (13.5 oz) can coconut milk
  • 1 cup chicken broth
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • 1 teaspoon brown sugar
  • 1 tablespoon lime juice
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked basmati or jasmine rice, for serving

Instructions

  1. Heat the vegetable oil in a large Dutch oven or deep skillet over medium heat.
  2. Add the diced onion and cook for 4–5 minutes until softened.
  3. Stir in the garlic and ginger and cook for 1 minute until fragrant.
  4. Add the curry powder, turmeric, cumin, paprika, and coriander. Stir constantly for 30 seconds to toast the spices.
  5. Mix in the tomato paste and cook for another minute.
  6. Add the chicken pieces and cook for 5 minutes until lightly browned.
  7. Pour in the coconut milk and chicken broth, stirring until combined.
  8. Add the cubed potatoes and brown sugar, then bring the curry to a gentle simmer.
  9. Cover and cook for 20–25 minutes, stirring occasionally, until the potatoes are fork-tender and the chicken is fully cooked.
  10. Stir in the lime juice and season with salt and pepper to taste.
  11. Garnish with chopped cilantro and serve hot over steamed basmati or jasmine rice.
