- 1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips
- 12 oz (340g) penne pasta or fettuccine
- 2 tablespoons olive oil, divided
- 2 tablespoons Cajun seasoning, divided
- 1 tablespoon unsalted butter
- 1 small yellow onion, finely diced
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup freshly grated Parmesan cheese
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken strips and season with 1 tablespoon Cajun seasoning. Cook until golden and cooked through, about 5-6 minutes. Remove chicken from skillet and set aside.
- In the same skillet, melt butter with remaining 1 tablespoon olive oil. Add onion and red bell pepper; sauté until softened, about 3-4 minutes. Add garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Stir in smoked paprika and black pepper. Bring to a gentle simmer and let cook for 3-4 minutes to thicken slightly.
- Reduce heat to low and gradually whisk in Parmesan cheese until smooth and creamy. Stir in remaining 1 tablespoon Cajun seasoning, adjusting to taste.
- Return the cooked chicken to the skillet and add the drained pasta. Toss until everything is well coated with the sauce.
- Serve immediately, garnished with extra Parmesan and chopped parsley if desired.
