- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon curry powder
- 1 (13.5 oz) can full-fat coconut milk
- 1 cup chicken broth
- Juice of 2 limes
- 1 teaspoon lime zest
- 1 tablespoon honey
- 2 cups fresh baby spinach
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add onion and cook until softened, about 3 minutes. Add garlic and ginger, cook for another minute until fragrant.
- Add salt, pepper, paprika, coriander, and curry powder. Stir well to coat the onions and spices.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer.
- Add coconut milk, lime juice, lime zest, and honey. Stir to combine.
- Return the chicken to the skillet. Simmer for 15-20 minutes, until chicken is cooked through and sauce has thickened slightly.
- Fold in baby spinach and cook until wilted, about 2 minutes.
- Taste and adjust seasoning if needed.
- Serve hot over fragrant jasmine rice, garnished with fresh cilantro.
Notes
For extra lime flavor, add more lime zest before serving. This dish pairs well with steamed jasmine rice and can be garnished with additional herbs like Thai basil or mint.
