- 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz (225 g) spaghetti or linguine
- 6 slices bacon, chopped
- 3 large eggs
- 3/4 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 cup heavy cream
Instructions
- Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of drippings in the skillet.
- Season chicken pieces with salt and pepper. Add to the skillet with the bacon drippings and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- In a small bowl, whisk together eggs, heavy cream, and Parmesan cheese.
- Reduce heat to low. Add the cooked pasta, chicken, and bacon back to the skillet. Pour the egg mixture over the top, tossing quickly to coat the pasta evenly. If sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Serve immediately, garnished with additional Parmesan and fresh parsley if desired.
Notes
For best results, toss the pasta with the egg mixture off the heat to prevent scrambling the eggs. Use freshly grated Parmesan for a smoother sauce.
