Frozen Fruit Salad Recipe

  • 2 cups strawberries, sliced
  • 1 cup blueberries
  • 1 cup seedless grapes, halved
  • 1 cup pineapple chunks
  • 1 cup mandarin orange segments, drained
  • 1 banana, sliced
  • For the Creamy Base:
  • 8 oz cream cheese, softened
  • 1 cup whipped topping
  • 1/2 cup sour cream
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • For the Crunchy Layer:
  • 1/2 cup chopped pecans
  • 1/4 cup shredded sweetened coconut
  • For Garnish (optional):
  • Fresh strawberry slices
  • Mint leaves

Instructions

  1. In a large bowl, combine strawberries, blueberries, grapes, pineapple, mandarin oranges, and banana slices.
  2. In a separate bowl, beat cream cheese, sour cream, sugar, and vanilla until smooth.
  3. Fold in the whipped topping until fully combined.
  4. Gently fold the fruit mixture into the creamy base.
  5. Stir in the chopped pecans and shredded coconut.
  6. Transfer the mixture to a freezer-safe dish and spread evenly.
  7. Cover and freeze for 4–6 hours or until firm.
  8. Let sit at room temperature for 10 minutes before serving.
  9. Scoop into bowls and garnish with fresh strawberries and mint if desired.
