- 2 cups cooked chicken breast, finely shredded
- 2 medium zucchini, grated and squeezed dry
- 1 ½ cups shredded sharp cheddar cheese
- 2 large eggs
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, combine the shredded chicken, grated zucchini, cheddar cheese, and eggs. Mix well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, garlic powder, and onion powder.
- Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
- Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For best results, squeeze as much moisture as possible from the grated zucchini to prevent the muffins from becoming soggy. Store leftovers in an airtight container in the refrigerator for up to 3 days.
